Sweet Potato Homemade Wine

Ingredients:
- 12 cups chopped sweet potatoes
- 5,5 cups sugar
- 2 cups light raisins
- 1 teaspoon yeast nutrients
- 2 thinly sliced oranges
- 1 campden tablet
- 0,5 teaspoon pectic enzyme
- 1 package wine yeast
- water
Place chopped potatoes in a pot and cover it with water. Now boil for 25 minutes. Mix primary fermentor with add choped raisins, sugar and liquid (squeez the pulp). Add water so it would be a total of 1 gallon. Add all other ingredients except yeast, stir carefully and leave to sit till next day. Add yeast and leave for 6 days. Stir daily.
Rack at three weeks. Add 1/2 cup sugar dissolved in 1 cup wine. Stir gently, and place back into secondary fermentor. Repeat process every six weeks until fermentation does not restart with the addition of sugar. Rack every three months until one year old. Bottle.
