Homemade sparkling wine: how to prepare fruit wines

To prepare homemade sparkling wine you should take 2-3 year old fruit wines (apples will be the best option). Start preparation in the middle or in the end of summer to get it ready by winter.
Homemade sparkling wine: Step 1
Add ¼ tea spoon of sugar in each bottle of wine and 1 tea spoon of wine which currently is in active fermentation process. Carefully close the bottles. Bottle shouldn’t be too full, leave around 2 cm between wine and cork. Wrap the cork with adhesive tape, otherwise it will flying out. Leave the bottles in cool and dark place for few months. First step is over when wine becomes absolutely clear and you don’t see any signs of fermentation.
Homemade sparkling wine: Step 2
When wine become clear you should start the next preparation step – removal of sediment. First put all the bottles upside down so that sediment would accumulate on the cork. To accelerate the process shake each bottle one or twice a day. This might take some few weeks. Then comes the last part: take the bottle in left hand and hold it horizontally. Remove the adhesive tape.
Cork will fly out taking away the sediment and a bit of wine. Immediately put the bottle vertically, quickly add wine (the one that you used for preparation) or fruit liquor (if you want to prepare sweet sparkling wine) so that bottle would be full and carefully cork it. Keep sparkling wine in cool and dark place for another 2-3 months. Finally your homemade sparkling wine is ready!
